Almond Hot Chocolate

For a really luxurious taste, try this with a good-quality chocolate brand such as Callebaut or Valrhona.

Ingredients
Serves: 4
Almond Milk
  • 6 ounces bittersweet or semi-sweet chocolate, chopped
  • 1 teaspoon unsweetened cocoa, plus more for garnish
  • 2 cups almond milk
  • 1 teaspoon vanilla extract
Chocolate-Covered Almonds
  • 1/2 cup almonds, roasted
  • 2 ounces bittersweet or semi-sweet chocolate, chopped
Preparation
  1. Place the chocolate and cocoa in a bowl.
  2. Bring the almond drink to a boil in a saucepan.
  3. Pour over the chocolate and cocoa and whisk well to melt and foam.
  4. Stir in the vanilla. If available, use a mixer to make it even frothier on top.
Chocolate Covered Almonds
  1. Place a metal bowl with chocolate inside a small saucepan with 1 inch of water. Bring water to a simmer; stir the chocolate until melted. Remove the pan from the heat.
  2. Quickly dip half of each almond in melted chocolate. Let dry on waxed paper and serve.
